1 cup of milk
3 large eggs
1 cup of plain flour
1/2 tsp of vanilla extract
12 tsp of caster sugar
knob of unsalted butter
6 tsp of sunflower oil
3 tbsp of cinnamon
2 tbsp of sugar
70g of unsalted butter (melted)
Pre heat the oven to 200C / 400F / Gas Mark 6
Beat the eggs until smooth. Then Tip all the ingredients besides the sunflower and toppings into mixture to make the batter.
Pour 1 teaspoon of sunflower oil into eat muffin tin and heat in the oven for 8 minutes.
Remove the tin from the oven carefully and pour the batter into each hole about half way up. The oil is hot so it might sizzle a bit. Bake for 25 minutes unto the popovers are golden-brown.
While the popovers are baking mix the sugar and cinnamon together until combined.
Remove the popovers from the tin and coat each one with the melted butter and then coat with the cinnamon sugar mixture.
