Pico Party Recipe - Cheesecake Stuffed Strawberries
I have always loved creating recipes with a twist, and these cheesecake stuffed strawberries are no different. They are so quick and simple to make and even easier to eat! Just a delicious and crowd-pleasing treat for you to whip up for any party.
85g Chocolate chip cookies (crushed into a crumb)
1 Tablespoon vanilla extract
50ml of double cream
180g cream cheese
1 Pack of strawberries
Gently hollow out each strawberry with a knife to make a hole in the middle. Place on to the parchment paper and set aside.
Whisk the cream cheese, vanilla extract and double cream together until combined.
Once the mixture is all combined, add half the crushed chocolate chip cookies and combine with a wooden spoon. Place the rest of the crushed chocolate cookies onto a flat plate.
Fill each strawberry hole with the mixture and dip the top of the strawberries into the crush chocolate cookie mixture. Place in the fridge to set for 2-3 hours.
