Pico Party Recipes - Chocolate Chip Cookie Cheesecake Bars

You can't go wrong with cheesecake and adding chocolate chip cookies is a win win! This cheesecake recipe looks impressive but is zero effort and doesn't take too many ingredients. Feel free to swap out the chocolate chip for your favourite cookie choice, as the recipe will still work no problem!
Ingredients
400g of Chocolate Chip Cookies (Half the mixture should be crushed into a crumb and the other should be crushed with larger chunks)
150g of unsalted butter
400g of Cream cheese 
120g of icing sugar

Baking paper
Rectangle baking tray 

Instructions:

STEP 1
Line your tray with enough baking paper so you are able to lift the cheesecake out once set.

STEP 2
Place the butter on the hob to melt. While the butter is melted crush up half the cookies using a food processor or a bag and rolling pin. Then place into a bowl and add the melted butter. Mix until combined and place into the fridge.
 
STEP 3
Place the cream cheese and icing sugar into a bowl and whisk until combined. Crush the remaining cookie mixture into chunks. Then mix half of the remaining cookies into the cheesecake mixture with a wooden spoon.

STEP 4
Take the biscuit base out of the fridge and top with the cream cheese filling. Spread the mixture out evenly using the back of a spoon.

Place the remaining cookie mixture on top of the cream cheese filling. Then place into the fridge to set over night.

Once set, take the cheesecake out of the fridge and pull out using the excess baking paper. Cut into equal squares and serve.
