Pico Party Recipes - Lion Vegetable Tray
Looking for something that's fun and healthy for a Safari themed party?! Look no further, we have the ultimate showstopper that is easy to make and looks great too. I chose to make my own hummus to save on plastic waste and, like most things, I think homemade tastes way better than shop bought!
For the hummus:
240g of tinned chickpeas
Teaspoon of baking powder
60ml of good quality olive oil
Salt & Pepper
1 x small clove of garlic
For the vegetable tray:
6 x carrots
2 x orange peppers
1 x red pepper
2 x olives
2 x circular crackers of your choice.
Place the chickpeas, including the water, into a pan over a low heat. Once all the chickpeas are placed in add the baking powder. Leave on the hob for five minutes.
Once you've finished boiling the chickpeas, drain them and place in a food processor or blender. Add all the remaining hummus ingredients and blend. Once blended place into a small bowl and into the fridge.
Now cut your veggies, starting with half the carrots being around 2.5cm thick and 10cm long. For the second set of carrots roughly chop them to make 1.5cm wide and roughly 6cm long. Cut both the orange and the red peppers lengthways, cutting the rounded ends off the bottom of each side.
Once all the veg is prepped, cover with a little lemon juice to keep fresh.
Place the small hummus bowl into the middle of a plate. Start by placing the longer carrots around the bowl, then adding the smaller carrots to fill in any gaps. Next add the orange peppers, spreading equally around and again filling in any gaps. Add the red peppers last and place evenly around.
Serve on the party table and you will have some very impressed little lions!
