Pico Party Recipes - Strawberry Shortcake

 

Summer is drawing to a close and that means the season for British strawberries is nearly over! That's why I thought it would be a good idea to create one last recipe with them before they go.

Ingredients
1x pack of strawberries (Sliced)
200g clotted cream 
50g of sugar
220g all purpose flour
2 tsp baking powder
1 tsp baking soda
300g of double cream
pinch of salt 

Instructions

STEP 1
Preheat the oven to 200 degrees and line a 8'' x 8'' baking tray.
STEP 2
Mix the strawberries with two tablespoons of sugar and coat thoroughly. Once all the strawberries are coated place into the fridge.

Mix the rest of the sugar, flour, baking powder, baking soda and salt together until combined. Add the double cream and combine together.

When the mixture has formed into a dough type consistency, place into the baking tray. Press down with your hands until distributed evenly among the tray. Then place into the oven for 20 -22 minutes, until the shortcake looks golden.

STEP 4
Once the shortcake has been taken out of the oven leave to cool. Once cool cut into twelve equal slices and then cut each slice in half width ways. Add the clothes cream and strawberries and make into a sandwich. Repeat this for each slide.
